Eos 30 Immediate help!

I have just recived my eos 30 date camera order from dubai.

Package contains only a german user manuel book so I didnt understand anything

I coulnd find how to change Aparture value (F value ). I tried the same thing as my eos XT REBEL but I coulnt succeed to change the apurture.

please help me if anyone knows how to do this.I can change it in the AV mode but I can only change shutter speed in the Manuel mode.Tommorrow Ive planned to take some photos and now Im really unpations I HAVE TO LEARN IMMEEDIATEly
