A good idea is to take it suprisingly, so they don´t know what is going on. That is the way to keep the natural composition!
How do i do it?
Sometimes i pretend that i am testing my camera or showing to other people. In the beggining you wont get nice photos because the person is not feeling secure and thinks you are capturing him. Later when he realises (falsly) that you are not taking photos, than he relaxes!
A second method that i rarely use is to press the shutter button without even looking in the viewfinder. taking by suprise :)
good luck and don´t get cought cause some people know how to get angry :)
