When shooting with a flash on my nikon D90 (both onboard and slave unit) I can't seem to adjust the shutter past 200--anybody know a trick?

Check the menu for FP Sync and that should take care of it.

You didn't specify which flash you're using, which can make a difference.
According to specs, Auto FP High-Speed Sync, and modeling illumination are supported with all CLS-compatible Nikon flash units except SB-400 when used with a D90.
For a quick review of functions, you can look through Dpreview here:

I'm trying to remember how to do this with my D-200 and an SD-600.... Reading continues, since I know I read it somewhere, but can't for the life of me remember how to make it work. Ah projects.

FP sync should be on. It works on my D80 with a SB600 to allow up to 1/4000 with FP sync rather than 1/200 without.

Not sure if the discussion below helps but it's all I could find in a hurry.

Specs,
Flash Sync Speed Up To 1/200
FP High Speed Sync Up To 1/4000
