When attempting to get in flight eagle/hawk pics with a blue or cloudy sky I get a dark silhoutte of the bird. Is spot metering the trick? Any suggestions?

Yes, spot metering should do the trick. The big expanse of bright sky is fooling the camera's metering into underexposing (by at least one stop for a blue sky and two stops for cloudy).
