Just uploaded an image taken today, April 1, 2020 and the EXIF display shows March 29! I immediately went to the camera and checked whether I had set the day correctly and it was correct. (I did change March 29 to April 1 at the left under the image). https://pbase.com/image/170572034/original

I suggest that you talk to your camera about it. Right click on the file in Windows and look at the file properties.

PBase is just reporting what the file says. How it came to say that is between you, your camera, and Photoshop CS6. (Or, more likely Bridge if you use that. Bridge allows the date and time shot to be altered either manually or by a Metadata template. It may have been unintentionally done in there. I don't know whether Lightroom allows that but it's academic as the metadata on your file shows you using PS CS6 rather than Lightroom.)
